LEMON KING CAKE COOKIES GLAZE SPRINKLES

Method
- Preheat the oven to 170 degrees F.
- Separate the coconut into 3 different bowls and add 1-2 drops of purple food coloring to one bowl, green into the next, and yellow into the third bowl along with 1-2 drops of water.
- Mix well and transfer the coconut to a baking sheet.
- Bake for 10 minutes, and let cool.
- Change the oven temp to 350 degrees F and prepare a baking sheet with parchment paper. Cut the bar into small pieces and place them on the baking sheet.
- Bake for 5 minutes and let cool completely.
- Place the bar pieces into a food processor and blend until small crumbles form.
- Add in the dry cookie ingredients and blend until combined.
- Add in the wet ingredients and blend until a dough forms.
- If dough is too dry, add 1 tablespoon of water.
- Separate the dough into 10 evenly sized balls and place them on the baking sheet.
- Bake cookies for 8-10 minutes until golden brown and let cool.
- Stir together the glaze and drizzle over the cookies before topping with the colored coconut sprinkles
