Salmon Steak with Arugula Salad
Salmon is a delicious and easy-to-cook fish with lots of healthy omega-3 fats, high protein and a days worth of vitamin d.
Today we’ll show you a simple meal to cook with this great fish that is easy to make and tastest great!
You will need:
- 1 salmon steak per person (3oz)
- Olive oil
- Salt & Pepper
- 2oz white wine
- Juice from 1/2 a lemon
Brush salmon with light extra virgin olive oil , and rub with with fresh black pepper and sea salt. Put it aside.
Heat a skillet on high for 8 minutes.
Spray pan with a no-cal spray.
Reduce to medium and place the salmon in the pan.
Cook each side for about 8 minutes.
While that cooks, combine the white wine and lemon juice in a separate bowl. Before you turn the salmon (so about 8 minutes in) pour the mixture over the steak.
To top it off, make this Arugula salad.
You will need:
- Fresh arugula
- Fresh sliced fennel (if available).
- 1.5oz olive oil
- Juice from 1/2 a lemon
- 1/4 teaspoon dijon mustard
- Salt and pepper
Put fresh arugula into a salad bowl and add fresh sliced fennel.
In a separate bowl mix the olive oil, lemon, dijon, salt and peper.
Pour dressing over the arugula and fennel and mix liberally. Top off with fresh shaved parmesian slices if you’d like.
