Ingredients

PECAN PIE PEANUT BUTTER CUPS

  • 2 Quest Peanut Butter Cups
  • 4 tbsp almond milk
  • 3 tbsp zero calorie sweetener
  • 1 tsp coconut oil
  • 1/2 tsp arrowroot flour or tapioca flour/starch
  • Pinch of sea salt
  • 1/2 cup chopped pecans
  • 1/2 tsp vanilla extract
  • 4 dollops of sugar free whipped cream

Method

  1. Prepare a cupcake pan
  2. Unwrap the Peanut Butter Cups and place them into the bottom of the cupcake liners
  3. Place the remaining ingredients (besides the whipped cream) into a pot and cook over medium heat.
  4. Let simmer while stirring for 2-3 minutes.
  5. Remove mixture from heat and let cool.
  6. Once cooled, distribute the pecan mixture over each peanut butter cup.
  7. Chill for at least an hour until pecan filling has set.
  8. Remove cups from liners, top with whipped cream and enjoy!
